The LSU AgCenter joined us this week to teach us a breakfast recipe for mornings when we are pressed for time. It didn’t disappoint!
- Non-stick cooking spray
- 1/2 Spinacy
- 1 egg
- Seasonings of choice, to taste
- 3 Tbsp shredded cheese of choice
- 1 whole wheat tortilla, 8- or 10- inch
In a small bowl, whisk egg until combined and smooth. Heat a pan over medium-high heat and spray with cooking spray. Add spinach to pan and saute. Once spinach is wilted, add egg and add seasonings. Do not stir. Once the eggs are almost set, fold one side over the other and cook until they are done. Sprinkle cheese on the tortilla. Transfer eggs to tortilla and fold tortilla over to cover eggs. Spray the pan again and cook folded tortilla, flipping occasionally, until both sides are browned and cheese is melted.
