Video: 3 Easy Veggie Side Dishes

We are always talking about incorporating vegetables into our meals and today Olivia, a registered Dietitian, shows us how easy it is. Learn how to make roasted brussel sprouts, carrot fries, and cauliflower potato mash. These 3 easy side dishes will go great with any meal. Brussel Sprouts

  • 2lbs sprouts
  • 1tbsp of oil
  • 4 tbsp balsamic vinegar
  • 3 tbsp maple syrup
  • Wash and cut brussel sprouts in half and remove stems
  • Toss sprouts in oil and season to taste
  • Spread sprouts evenly onto a baking sheet and cook at 400° for 10 mins
  • Remove after 10 mins flip and cook for 10 more mins (you are looking for a softened center)
  • For the sauce pour balsamic vinegar and maple syrup into a pot on the stove and bring to a boil for about a minute.
  • Reduce heat to low and let the sauce simmer and reduce to thicken
  • Pour sauce on cooked brussel sprouts

Carrot Fries

  • 1 1/2 pounds carrots
  • 1 tsp salt
  • 1 1/2 tsp garlic powder
  • 1 tsp paprika
  • 1/4 tsp pepper Wash and scrub carrots (peeling is optional)
  • Cut carrots uniform to ensure they cook evenly
  • Toss carrots in oil and season to taste
  • Spread evenly on a baking sheet and cook at 400° for 10 mins
  • Remove after 10 mins flip and cook for 10-15 more mins
  • Garnish with fresh parsley

Cauliflower Potato Mash

  •  6 red potatoes
  • 2 bags of frozen cauliflower
  • Wash and chop potatoes
  • Cover potatoes with cold water in a pot
  • Salt cooking water (depending on salt intake)
  • Boil potatoes until they are fork-tender
  • Strain potatoes and return to pot
  • Add 2 bags of microwaved cauliflower florets
  • Mash to desired consistency
