National Strawberry Day (Yum-O)
February 27th is National Strawberry Day. To honor this yummy occasion, we teamed up with the LSU Ag Center to prepare healthy-ish strawberry pancakes for our patients. See their recipe below!
Ingredients:
- 2 eggs
- 2 tablespoons of sugar
- 1 teaspoon vanilla
- 1 cup vanilla yogurt
- 2 teaspoons baking powder
- 4 tablespoons melted butter
- 1 cup all-purpose flour
- 1/2 cup old fashioned oats
- 1 cup strawberries, chopped
- Mini chocolate chips (optional)
Instructions:
Stir baking powder into the yogurt. Add the eggs, sugar, vanilla, and melted butter. Mix with a whisk. Add the flour and mix to combine. Stir in oats and strawberries.
Heat a frying pan. Melt some butter in pan so pancakes do not stick (repeat for each pancake). Pour part of the batter and spread it with a spoon. Cook over medium heat until you bubbles on the surface. Flip pancake and cook for another minute or so until browned.
Makes 10 3-4″ diameter pancakes.
