LSU AgCenter taught us how to make some amazingly delicious sweet potato hash browns. Check out the recipe below!
- 1 large sweet potato, peeled and finely diced
- 1 green bell pepper, diced
- 1/2 small onion, chopped
- 1 Tbsp + 1 tsp cooking oil
- 2 tsp low-sodium taco seasoning
Heat oil in a pan over medium-high heat. Add sweet potato and cook until softened, about 7 minutes. Add bell pepper and cook another two minutes. Add taco seasoning and onion, mix well, and cook another 5 minutes, or until vegetables are soft and slightly browned. Top with a fried egg if desired. Serves 2.
