Healthy eating can still be delicious, and Chef Hardette proved it. Chef Hardette Harris helped us kick off the first Saturday clinic of 2019 with her Waldorf Turkey Salad. Think chicken salad with turkey instead. You will quickly notice that her recipe does not call for mayonnaise which is a traditional staple in most chicken salad recipes. Instead she mixed together a yummy honey mustard dressing.
This recipe is so delicious some patients headed straight to the grocery store after their appointment so they could recreate her dish.
Waldorf Turkey Salad
2 TB Honey
2 Tb Dijon Mustard
1/3 c lemon juice
1/3 c olive oil
1 med apple peeled cored and diced
1/4 c celery small diced
3 c green onions chopped
1/4 c dried apricots small diced
1/3 c toasted sliced almonds
3/4 c cooked chicken or turkey breast cubed
S/P to taste
Mix together honey, mustard, lemon juice and olive oil. Add apple, celery, green onions, apricots and almonds. Stir in chicken and adjust seasonings.
